INGREDIENTS:
- 500g mutton/lamb, cut into medium-sized pieces
- 2 medium-sized onions, chopped
- 3 medium-sized tomatoes, pureed
- 2 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 1 green chili, sliced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp turmeric powder
- 1 tsp cumin powder
- Salt, to taste
- 2 tbsp vegetable oil
- 1/2 cup of water
- Fresh coriander leaves, for garnish
INSTRUCTIONS:
- In a large saucepan, heat oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and green chili to the pan and cook until the onions are soft and translucent.
- Add minced garlic and grated ginger to the pan and cook for a minute or until fragrant.
- Add pureed tomatoes to the pan and cook until the oil separates from the mixture.
- Add coriander powder, red chili powder, garam masala, turmeric powder, and cumin powder to the pan and mix well.
- Add the mutton or lamb pieces to the pan and mix well with the spice mixture.
- Add salt and water to the pan, cover it with a lid, and let it simmer for 30-40 minutes or until the meat is cooked through. Stir occasionally.
