बेकिंग में होने वाली 5 सबसे बड़ी गलतियाँ और उनसे कैसे बचें

For beginners, mistakes in baking are common, and it’s not a big deal. So, you’ve rolled up your sleeves, tied your dupatta tight, and set your heart on baking the perfect cake, or cookies, or naan khatai, but somehow, things don’t go exactly as planned. Maybe your cake came out looking like a collapsed tire, or your cookies could double as cricket balls. Don’t worry, you’re not alone! Baking is a combination of science, art, and a bit of luck, especially in a South Asian kitchen.

Here are the Top 5 Mistakes in Baking that most beginner and intermediate bakers make, and how you can avoid them like a pro.

Oven Mistake Desi Cooking Academy

1. Opening the Oven Door Too Often, “Cake dekhna hai ya chhutti leni hai?”

The Problem:
You baked your cake, and it was rising like your hopes… until you opened the oven door for the 5th time to check, and BOOM!! flat as a roti.

Why It Happens:
Every time you open the oven, the temperature drops drastically, especially in gas ovens (common in desi households). That sudden shift messes with the cake’s rising process.

The Fix:
Resist the urge to peek! Use your oven light and look through the glass instead. Set a timer, trust your recipe, and only open the door near the end of baking time.

Dense and rubbery biscuits mistake Desi Cooking Academy

2. Swapping Ingredients, “Atta daal do, sab chal jaata hai!”

The Problem:
You used atta (whole wheat flour) instead of maida (all-purpose flour) because that’s what was at home… and your cupcakes turned out dense and rubbery.

Why It Happens:
Atta is heavier and has more fiber and protein than maida. It absorbs more water and creates a denser texture, not ideal for soft, fluffy bakes.

The Fix:
Stick to the flour mentioned in the recipe unless you’re adjusting it on purpose. If you must use atta, try mixing it half-and-half with maida and add a bit more moisture to the recipe.

Unrisen dough mistake Desi Cooking Academy

3. Yeast Gone Wrong, “Dough toh ban gaya, lekin utha hi nahi!”

The Problem:
You made dough for bread or pizza, covered it lovingly, and came back an hour later… only to find it stubborn and still the same size.

Why It Happens:
Yeast needs warmth and sugar to activate. In colder kitchens or when using expired yeast, the dough doesn’t rise properly.

The Fix:
Always check the expiry date of your yeast. To activate it, dissolve it in warm water (not hot!) with a pinch of sugar and wait 5-10 minutes. It should get foamy. Also, place your dough in a warm spot, like near the stove or in a turned-off oven with the light on.

Bisuits burnt bottom Desi Cooking Academy

4. Burnt Bottoms, “Cookies ke neeche kya ho gaya?”

The Problem:
Your cookies smell amazing, look golden brown on top… but are blackened at the bottom. Oops.

Why It Happens:
This is common when using dark-colored or thin baking trays, which absorb and transfer more heat. Also, gas ovens tend to heat unevenly from the bottom.

The Fix:
Use light-colored or double-layered baking trays. Place your tray in the center of the oven, not at the bottom. You can even layer a second empty tray underneath to reduce direct heat.

5. Not Measuring Properly, “Andaza toh maa bhi karti thi!”

The Problem:
You scooped flour straight from the bag, poured oil by “feel,” and ended up with a baking disaster that neither rose nor tasted right.

Why It Happens:
Baking is a science, and unlike our desi cooking style, andazay se doesn’t always work. A little more or less can change everything.

The Fix:
Invest in a good set of measuring cups and spoons. If possible, use a digital kitchen scale for even more accuracy. Trust us, it’s worth it.

Don’t Give Up, Baking Warrior!

Even the best bakers have burnt a few cookies and flattened a few cakes along the way. Think of every mistake as a delicious lesson (or at least an amusing story for chai time). You’re not just baking, you’re learning, experimenting, and creating magic in the kitchen.

So keep your oven mitts close and your spirits high. Whether you’re baking naan khatai or chocolate cake, remember: practice makes progress.
