Ingredients:
- 2 cups basmati rice, cooked
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 large tomato, chopped
- 1 green chili, chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt, to taste
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 tbsp lemon juice
- 2 tbsp cilantro, chopped
- 3 tbsp ghee or oil
Instructions:
- In a large saucepan, heat the ghee or oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the onion, green chili, and garlic, and cook until the onion is golden brown, about 5-7 minutes.
- Add the ginger-garlic paste, turmeric powder, coriander powder, and garam masala, and cook for another minute.
- Add the chopped tomato and cook until it is soft and mushy, about 5 minutes.
- Add the frozen mixed vegetables, salt, and lemon juice. Cook until the vegetables are tender, about 5-7 minutes.
- Stir in the cooked rice and mix well, making sure the rice is evenly coated with the spices and vegetables.
- Cook the rice mixture, stirring occasionally, until the flavors have blended together and the rice is heated through, about 5-7 minutes.
- Remove the pan from heat and sprinkle with chopped cilantro. Serve hot.
