Ingredients:
- 4 medium-sized potatoes
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- 1 tsp amchur (dried mango powder)
- 1 tsp garam masala
- Fresh cilantro for garnish
Instructions:
- Boil the potatoes until they are fully cooked and easily mashable. Peel and mash them.
- In a pan, heat the oil and add cumin seeds, mustard seeds and let them crackle.
- Add coriander powder, turmeric powder, red chili powder and salt to the pan. Stir well.
- Add the mashed potatoes to the pan and mix well with the spices.
- Sprinkle amchur and garam masala on the potatoes. Stir to mix.
- Cook the mixture for 2-3 minutes until the potatoes are evenly coated with the spices.
- Garnish with fresh cilantro and serve hot with roti or rice.
