Ingredients:
- 200g chow mein noodles
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2 medium-sized onions, finely chopped
- 2 garlic cloves, finely chopped
- 1 medium-sized Shimla Mirch, sliced
- 1 cup mixed vegetables (carrots, beans, corn, peas)
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- 1 teaspoon soy sauce
- Salt, to taste
- 1 tablespoon cornstarch mixed with 1 tablespoon water
- 2 tablespoons chopped coriander leaves
Instructions:
- Cook chow mein noodles as per instructions on the packet. Drain and keep aside.
- Heat oil in a pan, add cumin seeds and let them splutter.
- Add chopped onions and garlic, and sauté until the onions turn light brown.
- Add sliced Shimla Mirch, mixed vegetables and sauté for 2-3 minutes.
- Add red chili powder, coriander powder, garam masala powder and mix well.
- Add cooked chow mein noodles and soy sauce. Mix well.
- Add salt, as per taste.
- Pour the cornstarch mixture and stir continuously until the sauce thickens.
- Sprinkle chopped coriander leaves. Serve hot.
