Indian Style Spicy Vegan Chowmein Noodles Recipe

Ingredients:

  • 200g chow mein noodles
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 medium-sized onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 medium-sized Shimla Mirch, sliced
  • 1 cup mixed vegetables (carrots, beans, corn, peas)
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon soy sauce
  • Salt, to taste
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 2 tablespoons chopped coriander leaves

Instructions:

  1. Cook chow mein noodles as per instructions on the packet. Drain and keep aside.
  2. Heat oil in a pan, add cumin seeds and let them splutter.
  3. Add chopped onions and garlic, and sauté until the onions turn light brown.
  4. Add sliced Shimla Mirch, mixed vegetables and sauté for 2-3 minutes.
  5. Add red chili powder, coriander powder, garam masala powder and mix well.
  6. Add cooked chow mein noodles and soy sauce. Mix well.
  7. Add salt, as per taste.
  8. Pour the cornstarch mixture and stir continuously until the sauce thickens.
  9. Sprinkle chopped coriander leaves. Serve hot.
