Ingredients:
- 1 lb boneless and skinless chicken breast or plant-based protein, cubed
- 1 tablespoon ginger garlic paste
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1/2 teaspoon cayenne pepper (optional)
- 1 can diced tomatoes
- 1 medium onion, chopped
- 1 green chili, chopped (optional)
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- Salt, to taste
- Rice, for serving
Instructions:
- Heat olive oil in a large pan over medium heat. Add the chopped onions, green chili, and minced garlic. Cook until the onions are translucent.
- Add the ginger garlic paste, coriander powder, cumin powder, turmeric powder, garam masala, and cayenne pepper. Cook for 2-3 minutes.
- Add the diced tomatoes and continue cooking until they break down and form a sauce, about 5 minutes.
- Add the cubed chicken or plant-based protein and salt, to taste. Cook for 8-10 minutes, until the chicken is cooked through or the plant-based protein is heated through.
- Serve the chicken fried curry with boiled rice.
