Chicken Fried Curry with Boiled Rice (Vegan)

Ingredients:

  • 1 lb boneless and skinless chicken breast or plant-based protein, cubed
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can diced tomatoes
  • 1 medium onion, chopped
  • 1 green chili, chopped (optional)
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Rice, for serving

Instructions:

  1. Heat olive oil in a large pan over medium heat. Add the chopped onions, green chili, and minced garlic. Cook until the onions are translucent.
  2. Add the ginger garlic paste, coriander powder, cumin powder, turmeric powder, garam masala, and cayenne pepper. Cook for 2-3 minutes.
  3. Add the diced tomatoes and continue cooking until they break down and form a sauce, about 5 minutes.
  4. Add the cubed chicken or plant-based protein and salt, to taste. Cook for 8-10 minutes, until the chicken is cooked through or the plant-based protein is heated through.
  5. Serve the chicken fried curry with boiled rice.
