Chinese Biryani Recipe
Ingredients:
- 1 cup basmati rice
- 1 lb boneless chicken, cut into bite-sized pieces
- 1 large onion, sliced
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup diced tomatoes
- 1 cup chicken broth
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup carrots, julienne cut and fried
- 1 cup cabbage, julienne cut and fried
- Fresh cilantro, for garnish
- Fresh lemon wedges, for serving
Instructions:
- Rinse the rice in cold water and set aside.
- In a large pot, heat oil over medium heat. Add the sliced onions and cook until they are soft and translucent.
- Add the minced garlic and grated ginger and cook for another minute.
- Add the diced bell peppers, diced tomatoes, chicken broth, turmeric, cumin, coriander, paprika, salt, and pepper. Stir to combine.
- Add the chicken and bring the mixture to a boil.
- Reduce heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the chicken is cooked through.
- In a separate pot, cook the rice according to package instructions.
- Once the chicken is cooked, add the fried carrots and cabbage to the pot and mix well.
- To serve, layer the cooked rice over the chicken and vegetable mixture.
- Garnish with fresh cilantro and serve with lemon wedges on the side. Enjoy!
