Chinese Biryani Recipe

Ingredients:

  • 1 cup basmati rice
  • 1 lb boneless chicken, cut into bite-sized pieces
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup diced tomatoes
  • 1 cup chicken broth
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 cup carrots, julienne cut and fried
  • 1 cup cabbage, julienne cut and fried
  • Fresh cilantro, for garnish
  • Fresh lemon wedges, for serving

Instructions:

  1. Rinse the rice in cold water and set aside.
  2. In a large pot, heat oil over medium heat. Add the sliced onions and cook until they are soft and translucent.
  3. Add the minced garlic and grated ginger and cook for another minute.
  4. Add the diced bell peppers, diced tomatoes, chicken broth, turmeric, cumin, coriander, paprika, salt, and pepper. Stir to combine.
  5. Add the chicken and bring the mixture to a boil.
  6. Reduce heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the chicken is cooked through.
  7. In a separate pot, cook the rice according to package instructions.
  8. Once the chicken is cooked, add the fried carrots and cabbage to the pot and mix well.
  9. To serve, layer the cooked rice over the chicken and vegetable mixture.
  10. Garnish with fresh cilantro and serve with lemon wedges on the side. Enjoy!
