White Lasagna

INGREDIENTS:

  • 9 lasagna noodles
  • 450g chicken breasts, cooked and shredded
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups whole milk
  • 1/4 cup (30g) all-purpose flour
  • 1 cup (100g) grated Parmesan cheese
  • 2 cups (200g) shredded mozzarella cheese
  • 1 cup (120g) ricotta cheese
  • 1/2 cup (60g) grated Parmesan cheese (for topping)
  • Fresh parsley, chopped (for garnish)

INSTRUCTIONS:

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions until they are all done. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
  4. Add the shredded chicken to the skillet with the onion and garlic. Season with dried basil, dried oregano, salt, and black pepper. Cook for another 2-3 minutes until the chicken is heated through and coated with the seasoning. Remove from heat and set aside.
  5. In a medium saucepan, heat the whole milk over medium heat until it’s warm but not boiling.
  6. In a separate bowl, whisk together the flour and grated Parmesan cheese until well combined.
  7. Gradually whisk the flour and Parmesan mixture into the warm milk, stirring constantly to prevent lumps from forming. Continue cooking and stirring until the sauce thickens, about 5-7 minutes.
  8. Remove the saucepan from heat and stir in the shredded mozzarella cheese until it’s melted and well incorporated.
  9. In a separate bowl, mix the ricotta cheese and the cooked chicken mixture.
  10. To assemble the lasagna, spread a thin layer of the cheese sauce on the bottom of a 9×13-inch baking dish.
  11. Place 3 lasagna noodles on top of the sauce. Spread half of the chicken and ricotta mixture over the noodles, then top with a layer of cheese sauce.
  12. Repeat the layers: noodles, remaining chicken and ricotta mixture, and cheese sauce.
  13. Top the lasagna with the remaining 3 lasagna noodles, then spread the remaining cheese sauce over the top. Sprinkle with the remaining grated Parmesan cheese.
  14. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  15. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and bubbly.
  16. Let the lasagna cool for a few minutes before slicing and serving. Garnish with chopped fresh parsley, if desired.
