Ingredients:
- 500g fish fillets (any firm white fish)
- 2 medium sized onions, chopped
- 2 large tomatoes, chopped
- 4 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 1 tsp cumin seeds
- 2 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- 2 tbsp oil
- 1/2 cup of water
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and cook until they are soft and golden brown.
- Add minced garlic and grated ginger and cook for another minute.
- Add chopped tomatoes and cook until they are soft and mushy.
- Add coriander powder, cumin powder, turmeric powder, red chili powder and salt to taste. Cook for a minute or two.
- Add the fish fillets to the pan and carefully mix with the spice mixture.
- Pour in 1/2 cup of water, cover the pan with a lid and cook for about 10-15 minutes or until the fish is fully cooked.
- Serve hot with boiled rice or roti, garnished with fresh coriander leaves.
