INTRODUCTION OF CHICKEN AND POTATO CHIP SHAWARMA

INGREDIENTS:
- 8-10 Flour Tortillas or Pita Bread
- 500g boneless chicken, cut into thin strips
- 1 large potato, sliced into thin chips
- 2 tbsp oil
- 2 medium onions, chopped
- 2 cloves of garlic, minced
- 1 tsp ginger paste
- 1 tsp garam masala
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp paprika
- Salt to taste
- 1/2 cup mayonnaise
- 1/2 cup plain Greek yogurt
- 2 tbsp tomato ketchup
- Juice of 1 lemon
- Fresh coriander leaves for garnishing
INSTRUCTIONS:
- Preheat a large frying pan over medium heat and add the sliced potatoes. Fry until golden brown and crispy. Remove from the pan and set aside.
- In the same pan, heat the oil and add the chopped onions. Cook until they are soft and translucent.
- Add the minced garlic and ginger paste and cook for 1 minute until fragrant.
- Add the chicken strips to the pan and cook until they are fully cooked and no longer pink.
- Add the spices – garam masala, cumin powder, coriander powder, red chili powder, turmeric powder, paprika, and salt. Mix well and cook for 2-3 minutes.
- In a separate bowl, mix together the mayonnaise, Greek yogurt, tomato ketchup, and lemon juice to make the sauce.
- To assemble the shawarma, place a tortilla or pita bread on a plate. Spread some of the sauce on the bread, then add a handful of the chicken and potato mixture. Roll up tightly and repeat with the remaining ingredients.
- Serve hot, garnished with fresh coriander leaves.
