Ingredients:
- 2 large potatoes, boiled and mashed
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 1 medium capsicum, chopped
- 2 cloves of garlic, minced
- 1 tsp ginger paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp turmeric powder
- Salt to taste
- 2 tbsp oil
- 2 tbsp butter
- Fresh coriander leaves for garnish
- 8-10 pav (Indian buns)
- Lemon wedges for serving
Instructions:
- Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
- Add onion, garlic, and ginger paste. Cook until the onion is translucent.
- Add the chopped tomato, capsicum, and all the spices. Cook for 5-6 minutes or until the tomato has softened.
- Add the mashed potatoes and mix well. Cook for 2-3 minutes.
- Add 1-2 cups of water to make a thick, creamy consistency. Season with salt to taste.
- In another pan, heat butter and gently toast the pav until they are golden brown.
- Serve the bhaji in a large serving bowl, garnished with fresh coriander leaves. Serve with the toasted pav, lemon wedges, and a dollop of butter.
