INTRODUCTION OF CHICKEN AND POTATO CHIP SHAWARMA

INGREDIENTS:

  • 8-10 Flour Tortillas or Pita Bread
  • 500g boneless chicken, cut into thin strips
  • 1 large potato, sliced into thin chips
  • 2 tbsp oil
  • 2 medium onions, chopped
  • 2 cloves of garlic, minced
  • 1 tsp ginger paste
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • Salt to taste
  • 1/2 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 2 tbsp tomato ketchup
  • Juice of 1 lemon
  • Fresh coriander leaves for garnishing

INSTRUCTIONS:

  1. Preheat a large frying pan over medium heat and add the sliced potatoes. Fry until golden brown and crispy. Remove from the pan and set aside.
  2. In the same pan, heat the oil and add the chopped onions. Cook until they are soft and translucent.
  3. Add the minced garlic and ginger paste and cook for 1 minute until fragrant.
  4. Add the chicken strips to the pan and cook until they are fully cooked and no longer pink.
  5. Add the spices – garam masala, cumin powder, coriander powder, red chili powder, turmeric powder, paprika, and salt. Mix well and cook for 2-3 minutes.
  6. In a separate bowl, mix together the mayonnaise, Greek yogurt, tomato ketchup, and lemon juice to make the sauce.
  7. To assemble the shawarma, place a tortilla or pita bread on a plate. Spread some of the sauce on the bread, then add a handful of the chicken and potato mixture. Roll up tightly and repeat with the remaining ingredients.
  8. Serve hot, garnished with fresh coriander leaves.
